cut yer eggplant into thin slices and soak in salt water for 15 minutes or so. open a bottle of red wine, pour yourself a glass. bread the eggplant (egg and breadcrumbs). fry it up in olive oil, golden brown. pour a second glass of wine. slice up a red bell pepper, toss with olive oil and balsamic vinegar, than pop 'em in the toaster oven until slightly burned. dump the peppers into a paper bag with a bit of salt and set aside. drizzle a bit of oil on a couple of thick slices of sour dough bread, toast lightly. assemble: eggplant, peppers, sheep's milk feta, fresh parsley put John Lee Hooker on the hi-fi. pour another glass of wine!

That's wonderful, Doof!!!!
It sounds like you and I subscribe to many of the same cooking techniques...like wine.
BTW, is that the 'new digs' in the background of the photo? Are you enjoying your new home?

Thanks Lou!
Yup, the place has come a long way. In fact, it's downright cozy at times. We officially completed the renovation (the deadline stuff) mid-February, so we made it out alive! Of course, we've got a list of things that still need to be done before the big kegger/potluck
We barely got the last thing done before we were out the back door, breaking ground on the garden, haha. Got our first round of seeds in flats and are furiously digging, trying to get the ground ready for our seedlings-in-progress.
Life is slowly returning to "normal," meaning, we're not eating/breathing renovation full time any more. Still need to finish some trim work, get the rest of our stuff out of storage, and set the place up, but we're getting there. Here's a shot of the living room from the other night, on its way to coze. Also, a shot of the finished ceiling/moulding/paint in the studio space. (Oh, and there's a really fun before/after photo project that we did here!)
Hooray!!

My oh my how busy you have been!
I love the color pallet you have chosen and the slate floor in the bathroom rocks! (pun certainly intended). I wish we could all be there for the open-house-kegger, I'm sure it will be wonderful. You have so much to be proud of and celebrate.
Since you mentioned your garden, I want to bring up the idea of sending you some seeds, again. If you're interested in having a little piece of 'our' yard in 'your' yard, just drop me a line with your address and I'll send you some when the time is right. I have several types of parsley, incredible nasturtiums and countless other herbs and flowers that I would love to share. I could even send you some dried seeds from our hierloom tomatoes we are hoping to enjoy this summer.
Again, great job! And thank you so much for sharing.

Busted! Thats' where I got the idea. Although, somehow I'd forgotten about Lou's thread! Weird... I didn't really think all these folks would be interested.
FWIW, of course you guys are more than welcome to join my little community of misfit avant-gardists. Hell, some of you guys here are more avant garde than I am! Main thing for me is to get a really diverse group of musicians that aren't merely academic... uh... TOOLS!

Busted is right!
Now that I might have a little more time (thyme?) on my hands I just might join...
I need to post photos of all of our herbs, I think it would really blow a lot of you away. I never dreamed I would be able to just walk outside my kitchen and have three different types of rosemary, three different varieties of basil, chives, onions, regular and Italian parsely, and I don't even know how many types of thyme...it's a cooks paradies! Our tomatoes are rocking and I just planted a variety of greens. I'm ready for fall, too, with my carrot and radish seeds. What I don't seem to have luck with is fruit trees, but my edible flowers are really flourishing this year.
As for 'What's for Dinner Tonight', last night it was homemade lentil soup with tons of goodies from the garden. I thought it was wonderful! I could probably eat that every day.
Keep up the good work, Jeff, and don't be surprised when I join.

Yeah, it was weird when I saw Johnny's message that I'd made an homage to your thread! I was like... uh.... oh... can I get away with forgetting Lou's AS thread. Ouch!
I have a German musician friend that's always blogging recipes and I wanted to get him more active on the site, so I thought that would be one way to do it! Weird how stuff works out.
Yeah, anybody can join, but I have to warn you it's a very career-obsessed bunch of people. I don't think anybody's going to get any interest in their electronic music there, unless it's extremely weird. The folks claim they're egalitarian, but the 'filters' are on!

I have not been cooking too much lately, it's been too hot, in the 90's...so mostly just easy food and salads.
But what I wanted to mention was that in my previous post I left out some of the wonders that are growing in our yard: oregano, two types of mint, and dill. Here in San Diego we are blessed with an almost 12 month growing cycle, so the herbs do wonderfully. I'm almost ready to harvest some of our new lettuce and the squashes are 'squashing' as they should. I wonder how Doof's garden is doing this year? I'm sure he and the missus could put our garden to shame.

thanks for the vote of confidence
I'm glad to hear your garden is doing well!
overall, I give our garden an A! well, a B. but it makes me sad to express anything less than love and hope for our little plot. the reality is, we went into it this year knowing that it was going to be rough. reasons: there was no existing garden, we really beat on the soil structure by digging (we dug the beds 2' deep), extracting rocks (boulders, rocks, stones, even sifted it all to get the little guys out). we just figured we'd do what we can and observe and learn and just the seeds in and get going.
we've been through two seasons/rounds now (spring and summer). I'd say the main negative issue is lack of nitrogen and calcium in the soil. things grow well but then fruit small. but we've been adding compost along the way (as it becomes ready from the bottom of our heap), mulching, and so on. another problem was the groundhog who ate all our broccoli, kale, beans, and more. we're peace-loving folk, but this thing is really testing that...we've kept it away by sprinkling cayenne on the leaves and also by strategically placing some of our friend's dog's poop by its home and at the woods' edge.
but overall, it has been a success. I mean, 52 pounds of tomatoes, a bumper crop of turnips, and a freezer full of pesto and beet burger batter!
right now we're gearing up for our fall and winter growing. we've pulled out the stuff that was completed and added composted chicken manure, some greensand, bonemeal, and then planted rye as a interim cover (and it's also nice green matter for the compost heap). we've got broccoli, kale, and turnips all growing in flats, radishes sprouting up in the ground, and we'll be planting mizuna tonight. Erika made this great planting schedule for the winter stuff (mache, mizuna, spinach, arugula, claytonia). the schedule finds the intersections of recommended planting dates and moon phases. and it finally helps us with succession planting (we're planting some turnips now, some in three weeks, for example).
we've been canning like crazy. tomatoes, pickled beets, pickles, peach honey, brandied peaches...mmm. what's available right now in the garden is chard, beans, tomatoes, peppers, eggplant, butternut squash, zukes, parsley, basil, and cucumbers.
but the coolest thing we've done this late spring/summer was to make a real attempt at eating as locally as possible. we joined a csa which is about 2 miles from the house, we've got the garden, and we have a great farmers' market a couple of miles down the road on Saturdays, where we get our meat, cheese, bread, etc. between those three things, we've only have to hit the g-store every few weeks to restock on things like dried beans, pasta, flour, rice, oils, cat food, etc. if it's not in season, we're not eating it. it has been awesome, super delicious, and not nearly as difficult as we thought it might be.
well, this is a huge and self indulgent post! probably way more info that anyone would care for, but I just get going when the subject comes up...and, coffee. coffee coffee.
oh, and what's for dinner!
Fettuccine with Tomato Cream Sauce
start sauteing in olive oil: lots of chopped tomatoes, shallots or onions, garlic, basil, zucchini (or mushrooms or eggplant). we had been celebrating with a bottle of champagne, so we splashed some of that in there, but white wine works too!

once it gets going good, boil 2 cups of stock until it's reduced to one cup.
heat on medium hi: 1 cup of heavy whipping cream, whisking often, in a pot deep enough to allow it to foam up. heat and whisk until reduced by half.

whisk the stock into the cream, once they've both been sufficiently reduced.
once the veggies are cooked down to a thickish consistency, pour it all into the cream/stock mixture.

mix into the pot of cooked pasta, sprinkle with parm and some fresh parsley and voila!

and what's for dessert? sour cream cake!

Oh my! Thank you for sharing!!!! I just wish we were there to enjoy it with you!
I knew your garden would kick our garden's ass! We're still just learning, so next year watch out!
Lately I have not had the energy to do half the cooking I used to, but tomorrow I am planning on grilling some marinated veggies and making a delicious salad including as much as I can from our garden and yard.
Thanks, Doof, for not only sharing pics, put for including the recipe as well.
